Simple, delicious, roasted cauliflower. It goes like this...
Pre-heat oven to 450 degrees.
Cut a head of cauliflower into florets, lay the pieces out on a baking sheet, drizzle with olive oil, season with salt + pepper, give things a toss, then squeeze the juice of about half a lemon all over it. Bake until lightly browned and to desired tenderness, approx. 20-25 minutes, tossing once or twice while roasting. Remove from oven, grate fresh Parmesan cheese all over the top, and serve it up.
This roasted goody makes for a great side with dinner, and is also perfecto for an afternoon brunch. In other words, I make it constantly.
{Note -- I'm a high temp roaster. But you can also do this at 400 or 425 for a little longer, if desired.}
